Peruvian food covers 5 continents
Thanks to the project “Peru: Passion for Food”, 23
representative dishes of our cuisine will reach 50 million
dinner guests, in the 80 countries where Sodexo operates.
Sodexo intended to make Peruvian food transcend
borders and they achieved it due to the project “Peru:
Passion for Food”, an initiative to internationalize our
cuisine, through festivals organized in the Sodexo dining
platform, present in 80 countries and in 5 continents.
Several recipes of traditional Peruvian food were
standardized to make this possible, with the objective
that they could be reproduced in different dining rooms
served by Sodexo worldwide. Thus, 23 representative
dishes were selected, choice made together with the
Peruvian Society of Gastronomy (APEGA), with whom a
cooperation agreement was signed in December 2009.
“Peru: Passion for Food” places our cuisine as a
combination of exotic, varied and novel flavors. The offer
is aimed at those looking for quality and new tastes. To
date, they were implemented in Sodexo dining rooms in
the United States, Spain, Chile and Colombia.
Selected dishes
The list of selected dishes is divided into three categories:

appetizers; main dishes and desserts. Among the
appetizers that stand out are: shrimp soup, mashed
potatoes with shrimps, fish ceviche, solterito and
vegetarian parihuela.
Among the main dishes: tallarín saltado taypá, ají de
gallina, seco con frejoles, cau cau with tofu, grilled chicken,
lomo saltado and pickled fish. And among the desserts:
passion fruit mousse, arroz zambito, suspiro a la limeña,
rice pudding and mazamorra morada.
Positioning
The fundamental idea that summarizes the positioning
strategies of the project is summarized in four main
foundations: experience, variety, flavors and global
presence. Experience refers to the opportunity to
transcend from the culinary experience to the discovery
of a culture.
Variety of food refers to the range of ingredients and
preparations that consolidate a diverse and balanced
offer. Flavors represent a harmonious combination of
essences that surprise with originality and versatility. And,
global presence refers to the possibility to share with
dinner guests from 80 countries, a “Peruvian gastronomic
journey” without comparison…
