Beef round with pears (Tall rodó de vedella amb peres)
Ingredients for 4 servings:1 round of beef; 500 g of onions, cut
into strips; 500 g pears; 1 glass of white wine; cinnamon; olive oil;
salt; black pepper; some water
Preparation: Season and brown the beef round in a casserole
with olive oil.
Add the onion and half the amount of pears, unpeeled and cut
into pieces.
Cook the rest of the pears with wine, cinnamon and water.
Add this pear broth to the beef round and let it reduce if
necessary.
Cut the meat into slices and serve together with boiled pears,
sieve the sauce and pour it on the meat.
